The Australian Government’s Environment Protection Act 1997(Revised 03/08/10) spells it out...
 
Smell"environmental nuisance means an unreasonable interference with the enjoyment by the public, a section of the public or a person of a place or area, if the interference is caused or is  likely to be caused by:
  
(a) dust, fumes, light, noise, odour or smoke; or    
(b) an unhealthy, unsightly or otherwise offensive condition because of  pollution"

The Act prescribes penalties from $100 up to $25,000 for causing offences through the emission of odours – a risk worth avoiding.
 
A common solution to date for odours has been to mask them with chemical essences. However, many people find these as offensive as the original odour and so the need was created for a system that actually destroys the smells. Plasma Clean's solutions grew out of a research program at the University of Manchester in the UK and the University remains today as a stakeholder in the business. Plasma Clean's equipment creates ozone, using plasma discharge (essentially a miniature, controlled lightning strike). In a restaurant or cafe many of the problems with odours are directly associated with the air extraction systems that are compulsorily installed above cooking equipment to take away heat. Of course, they also take away airborne volatile organic compounds (VOCs) which are the source of the smells and which find their way to the outlet of the ducting, where they can be nauseating for those around. Taking care of this problem can make the difference between a restaurant being allowed to trade rather than being shut down on the grounds of public nuisance or environmental transgression.

The remedy is simple. Xtract 2100 injects ozone (O₃) into the exhaust ducting where it interacts iimmediately and directly with the exhaust air, breaking down the VOCs into their benign components so that they no longer smell.
